PERFECT BARBACOA BEEF TACOS

Taco 'bout delicious! These barbacoa beauties are easy to make and impossible to resist.
INGREDIENTS
- 3lb beef chuck or arm roast
- 1tsp smoked paprika
- 2tsp salt
- 1tsp pepper
- 1 onion (chopped small)
- 4 tomatoes (petite diced)
- 1-2 Anaheim peppers (chopped small)
- 1tsp cumin
- 2Tbsp chili powder.
- 1/2tsp red pepper
- 1can adobe chilis
- 2tsp garlic powder
- 3Tbsp olive oil
DIRECTIONS
- Cuts roast into portions while removing any large pieces of fat.
- Heat the olive oil in Dutch oven. Sear until browned on all sides.
- Sauté all chopped vegetables with the meat drippings, until tender. Add the seasonings and adobe chili, next.
- Place seared beef back into Dutch oven and cook at 350 degrees for 3 hours, or until tender.
- Shred beef. I like to use a blender - it helps makes more of the sauce smooth.
- Bake for another 30 min.
- Serve with your favorite toasted tortillas with desired toppings, such as, pico, avocado, limes, cilantro, mexican cheese crumble, and more! So good!
NOTES:
This versatile beef recipe goes perfect in tacos, burritos (wraps or bowls), salads, nachos, quesadillas, or enchiladas - paired with all your favorite toppings, and a side of flavorful rice and beans.
