SWISS STEAK AND RED POTATOES

Easy and satisfying, this Swiss steak and potatoes recipe is perfect for a busy weeknight.

Swiss Steak and Red Potatoes
INGREDIENTS
- 4 Round Steaks (tenderized)
- 1/2 cup flour
- salt
- pepper
- garlic
- 1/4 cup olive oil
- 1tsp ground fennel seed
- 1tsp basil
- 1 tsp thyme
- 1 tsp oregano
- 1 Tbsp minced garlic
- 1 onion (chopped large)
- 1 zucchini (chopped)
- 28oz petite diced tomatoes
- red potatoes
DIRECTIONS
- Coat the beef steaks in seasoned flour mix (garlic, salt, and pepper) - can be down by dredging through plate or shaking in a Ziplock bag.
- Heat the olive oil in skillet. Brown the steaks on each side (approx. 3-5 min.) Set aside.
- Sauté the onion and fennel seed in the skillet with the meat drippings, until tender. Add the zucchini, next. Sauté for another 2 minutes.
- Place the quartered red potatoes into the bottom of the slow-cooker, followed by the steaks. Place the remaining ingredients on top. Cook on low for 4-6 hours, until the steak is tender.
- Serve with your favorite potatoes, rice, or noodles and enjoy!
NOTES: Can be cooked with a side of your favorite, rice, potatoes, or noodles. I love with red potatoes.
